For this ale, we wanted to focus on ridiculous flavor and aroma while keeping the bitterness in check. To do this, we employed a technique called “hop bursting.” Sounds pretty cool right? We agree. This means literally 95% of the hops are added after the boiling process. The result is massive aromas and flavors of mango, citrus, peach, pine, berries, and dankness, and all while - you guessed it - not being punishingly bitter! This is our flagship IPA. Excellent when paired with stinky cheeses or crispy Baja-style fish tacos. Hops: Mosaic, Amarillo, Citra, Simcoe Malts: 2-row, Oats, Wheat
